Il South East – Kent, Sussex, Surrey e Londra sud – ha più della metà dei vigneti del Regno Unito ed è la culla dello spumante metodo classico nel Paese (WineGB). Il gesso attraversa le North e South Downs, accanto a suoli di sabbie verdi (greensand), argille del Weald e argilla di Londra. Il Sussex ha la prima DOP (PDO) regionale del Regno Unito, che richiede almeno 15 mesi in bottiglia.
