Chablis wineries
The northern outpost of Burgundy lies in the Yonne around Chablis and Auxerre, closer to Champagne than to Beaune. Chablis is pure Chardonnay grown on limestone and marl, from Petit Chablis up to Chablis Grand Cru, a single appellation of seven climats on the slope above the town. The Grand Auxerrois around it adds red Irancy from Pinot Noir, Saint-Bris – the only Burgundy appellation for Sauvignon Blanc – and the hills of Vézelay and Tonnerre.
